Gary Wallace gained his Master Butcher qualification with Baxters Butchers in 1985.
1986 - He set up and ran a farm shop that pioneered breeding and marketing their own free-range, high-welfare pigs.
1991 - Gary was approached to open Chesterton Farm Shop. He was tasked with finding suitable stock from other suppliers as Chesterton did not produce its own. This proved an important step in discovering that local farms producing rare and traditional British breeds using less intensive systems provided a better quality product.
1994 - Working with the Rare Breeds Survival Trust (RBST), Gary helped set up a 'meat marketing initiative' which aimed to establish quality outlets for fully traceable, high-welfare British farm animals. As a result of his efforts, Chesterton Farm was the very first RBST approved butcher shop.
2003 - The Butts Farm Shop opened its doors… the rest, as they say, is history!
Gary is well known to food writers, tv chefs and a number of other celebrities all of whom he enjoys supplying with outstanding quality meat from The Butts Farm Shop.
